Kombu (kelp) 2X2
1 T. Bonito flakes
3 T. Meyer lemon juice
1-2 T. Mirin
3 T. Shoyu (Tamari)
1/2 T. Rice wine vinegar
Dash Siracha

Directions:
Directions:
Lightly rinse kombu and place in small bowl with lemon juice, Shoyu, rice vinegar, mirin.
Cover and let sit few hours, prefer overnight.
Add bonito and sit for few minutes then strain.
Enjoy with noodles, dipping sauce.
Store in refrig at least few months
