4 cups rhubarb
2/3 cup honey
7-10 medjool dates
5-7 crystallized ginger
1 cup raspberries (or strawberries or blackberries)

Place all ingredients in medium size pot over low heat. Cook, stirring frequently. When compote is about as thick as applesauce, turn off the heat (about 12 minutes).
