4 c. diced potatoes
1 medium onion, chopped
1/4 c. vegetable oil
1 1/2 c. chopped cooked chicken
1 1/2 c. chicken broth
2 tsp. parsley flakes
1 tsp. salt
1 tall can (12 oz.) evaporated milk

Directions:
Directions:
In large saucepan, cook potatoes in hot oil just until potatoes begin to brown. Add chicken, broth, parsley, and salt. Bring mixture to a boil. Lower heat, cover, and simmer about 20 minutes or until potatoes are tender. Stir in evaporated milk. Heat soup until steaming, do not boil.
