Crust & Topping:
4 c. flour
2 c. sugar
1/2 tsp. cinnamon
1/2 tsp. salt
1 1/2 c. margarine (3 sticks - softened)

Filling:
8-10 c. peeled, seeded & sliced zucchini (sliced like apple slices)
2/3 c. lemon juice
1 c. sugar
1 tsp. cinnamon
1/2 tsp. nutmeg

Directions:
Directions:
Combine Crust & Topping ingredient. Mix together well (almost like sugar cookie dough). Press half of mixture in bottom and sides of 9x13 pan. Bake at 375º for 10-12 min. Reserve other half for topping.

Boil zucchini in lemon juice for 6-8 minutes until zucchini is tender. Add sugar, cinnamon and nutmeg to zucchini mixture, mixing well. Continue to simmer gently until liquid is reduced (add a small amount of flour if needed to thicken juice). Pour over crust.

Sprinkle with remaining topping mixture. Bake at 375º for 40-45 minutes (double check after 30 min.)

*Can also cut crust recipe in half (for bottom) and use 1 1/3 c. packed brown sugar, 1 c. flour, 1 c. rolled oats and 2/3 c. butter (softened) mixed together for topping.
