2 1/2 cups flour
1 cup sugar
1 heaping Tbsp. shortening
1 tsp. lemon extract
1 cup milk
1/2 cup raisins (seeded)
1 1/2 tsp. baking powder
pinch of salt
2 eggs
1 square butter
1 grated lemon rind

Directions:
Directions:
Melt butter and shortening together. Add sugar. Mix well 2 minutes. Add eggs. Mix again. Add washed raisins. Sift flour, baking powder and salt. Add milk, flavoring and lemon rind.
Bake in well greased angel food mold at 375º for 45 minutes.
Sprinkle with powdered sugar or frosting.
