1/4 c. Sherry vinegar
3 T. Dijon
3 T. Pimentos de la Vera
3 garlic cloves
1 shallot
Salt and pepper

Blender and puree til smooth. Store refrig up to 2 weeks.
Use to marinate pork, drizzle over grilled meats and veggie, or to finish spicy egg dishes.
