-1 lb loaf of day old bread
-2 cups scalded milk
-1 lb candied fruit (paradise mix)
-1 1/2 cup flour
-1 box currants
-1 box raisins
-1 cup of cut up beef suet salted with 1 tsp salt
-1 cup oleo
-1 cup sugar
-2 tsp cinnamon, 1 tsp cloves, 1/2 nutmegs
-1 tsp mace
-1 tsp soda in tbsp warm water
-8 egg yolks
-1/2 cup fruit juice - cherry, cider, or ginger ale
-8 egg whites, beaten

Pudding dressing:

-1 cup sugar
-1/2 cup oleo
-2 cups milk
-5 eggs
1/4 tsp vanilla

Directions:
-Soak bread in milk
-Dredge fruit in flour
-Cream oleo and sugar in large mixing bowl
-Add egg yolks and beat well, add dredged fruit, beef suet, soaked bread, spices, fruit juice, soda
-Mix well with hands
-Mix in large dish pan
-Stir in beaten egg whites
-Dredge scalded cloth (1 yd unbleached muslin) rinsed in cold water with 1/2 cup flour and put pudding in center of cloth
-Tie a little loose to give room to swell
-Have kettle 1/3 full of boiling water
-Put old plate in bottom of kettle
-Boil 6 hours or until about dry
-Should be some syrup in bottom of kettle
-After taking out can, untie string
-Pull cloth up around pudding to shake it first
-Gradually pull cloth down as it cools

Pudding dressing:
-Cream sugar & oleo, add egg yolks and beat well
-Add milk & heat, stirring until it thickens, but do not let come to a boiling point
-Beat egg whites, stir in hot mixture, add vanilla
