1 envelope unflavored gelatin
1/4 cup cold water
1/2 cup hot water
1 Tlb finely chopped onion
2 Tlb dill weed
1 tsp salt
1/4 tsp sweet paprika
dash of hot sauce
1/2 cup mayonnaise
2 cups flaked salmon (canned or fresh)
1 cup heavy cream

Directions:

Soften gelatin in cold water, then add hot water and stir until gelatin is dissolved.
Add: onion dill, salt, paprika, hot sauce and mayonnaise. Set aside in fridge to chill.

While gelatin is cooling remove salmon from can (either pink or red works well) I put it in a strainer and work from there, separating the meat from the bones and skin. I don't put in any bones, skin or any of the dark flesh that is on the salmon. I only use the very pink flesh. I then put it in my fingers and mush it up into another bowl.

When the gelatin has started to set (15 min or so) usually around the edges and the center is still soft, whip the heavy cream to stiff peaks and add the cream and the salmon to the gelatin mixture and mix well

I just add the salmon and the gelatin mixture to the bowl with the cream and whisk it until it is all blended. Don't worry if the gelatin mixture sets before you get to it just break it up and put it in the bowl with the cream, after the cream is whipped and turn the mixer on and incorporate it with the cream, then add the salmon...works every time.

Pour it all into a mold and chill for several hours, or overnight. Unmold and serve with crackers.

Or just put it in a pretty dish and scoop it out, or a loaf pan and slice it for a 1st course.

This was a staple at our "12th Night" Parties back in the '80's and got carried over to our "Christmas in July" Parties in the 90's and 2000's
Easy, and everyone loves it;. I invested in a fish mold....looked good!!
