Vegetable or Canola oil for frying
Yellow squash, cut into chunks
1 medium onion, grated
2 eggs, beaten
2/3 cup flour
2/3 cup corn muffin mix
2 tsp. baking powder
3/4 tsp. salt

Directions:
Directions:
Place squash in pot with enough water to cover. Bring to a boil; cook 10 minutes. Drain and mash squash.

Heat oil in deep pot.

Mix 2 cups mashed squash with onion and eggs. In separate bowl, combine flour, corn mix, baking powder, and salt. Blend with squash mixture. Drop by teaspoonfuls into oil and fry until evenly browned.
