4 slices toasted white bread
leftover turkey
8 pieces of bacon
Mushrooms
Tomatoes

Mornay Sauce

• 4Tbsp butter
• 4Tbsp flour
• 2c milk
• 1 small onion
• 1 bay leaf
• 3 cloves
• 1 grate of a nutmeg
• 2 egg yolks
• 4 Tbsp cream
• 4 Tbsp Parmesan
• 4Tbsp Gruyere

This is an open faced sandwich. You can bake each sandwich in an individual 5x5 casserole dish or make four servings in a 9x9 pan. Toast the bread then place it in the pan. Layer, turkey, bacon, tomato, then mushrooms. Top with Mornay sauce and bake in oven at 400 degrees for 30 minutes.

Mornay sauce:

In a pan, Melt butter, add flour, stir in milk slowly. Add the onion studded with cloves and bay leaf. Cook and stir with wire whisk until smooth. Add nutmeg. Beat the yolks and cream until well blended. Add a little of the sauce to the egg mixture and return to the pan mixture. Cook until well heated. Add cheeses with whisk until blended.
