5 med. red potatoes, cut into bite size pieces
1/4 c. mayo
1 tbsp. parmesan cheese
2 tsp cider vinegar (or white)
1 tsp Dijon mustard
1/2 tsp salt
1/3 tsp pepper
green onion to taste

Directions:

Boil potatoes until fork tender.

Mix all other ingredients together and add to warm potatoes.

I like to double the sauce, and sometimes just mix it "by taste". I have also added celery for some added crunch. This salad is great warm and even cold the next day!
