3 lbs. of fryer cut up small
2 pkgs. Italian salad dressing mix
3 T. flour
2 tsps. salt
1/4 cup lemon juice
2 T. softened butter
1 pt. 8 oz. salad oil
1 cup of milk
1 1/2 cup of pancake mix
1 tsp. paprika
1/2 tsp. sage
1/4 tsp. pepper

preheat oven to 350º

wipe chicken dry,
make paste with the milk, pancake mix, paprika, sage and pepper. mix well
brush on chicken to coat evenly
stack pieces of chicken in bowl
cover and refrigerate several hours. 1 1/2 hours before serving, heat 1/2 inch oil in 2 large skillet's so chicken wont be crowed. dip pieces of chicken in milk then in pancake mixture, coat well. dust off excess. lightly brown 4 minutes on each side. place in 1 layer in shallow pans. spoon remaining milk over pieces seal with foil. bake for 1 hour at 350 then uncover and bake 10 minutes at 400..to crisp chicken baste with milk again for 8 minutes
