1 1/2 C. sugar
1 tsp. salt
2 tsp. ground cinnamon
1 tsp. ground ginger
1 tsp. vanilla
1/2 tsp. ground cloves
1/2 tsp. ground nutmeg (reserve to sprinkle on top of pies)
4 eggs
3 1/2 C. (29 ounce can) pure pumpkin
2 12 ounce cans evaporated milk
2 unbaked pie shells

1-Combine sugar, salt, cinnamon, ginger and cloves in medium bowl.

2-Beat eggs lightly in large bowl.

3-Stir in pumpkin, vanilla and sugar spice mixture.

4-Gradually stir in evaporated milk.

5-Pour into pie shells and sprinkle top with nutmeg.

6-Bake in pre-heated oven at 425* for 15 minutes.

7-Reduce temperature to 350* and continue baking for 40-50 minutes or until knife inserted near center comes out clean.

8-Cool on wire rack for 2 hours. Serve warm or chilled with cool whip.

Refrigerate any leftovers. Do not freeze this will cause the crust to separate from the filling.
