- 5 lbs of beets, remove roots and tip
- 1 tsp each of salt & pepper
- 2 tbsp white vinegar
- 4 tbsp sour cream
- water

Directions:
Directions:
In a large pot, add beets and cover completely with water. Boil for 15-25 minutes or until beets are fully cooked. Remove from heat and drain water. Remove beet skins and toss. Shred beets and place in a large pot. Add 6 cups of water and place on stove top. Add salt and pepper. Bring to a boil, cook for 15 minutes. Remove from heat, add vinegar, sour cream and serve.
