1-2 marinaded pork tenderloins
5-6 apples, cored and sliced (peeling is optional)
1 large onion, sliced or coarsely chopped
2 T. oil

Directions:
Directions:
Preheat oven to 425 degrees.

Add oil to well-seasoned cast iron skillet.

Sear tenderloin on all sides.

Remove tenderloin to a plate. Fry apples and onions in juice from searing until they are well-coated.

Using the apples and onions as a bed, return pork tenderloin to the skillet.

Bake in oven for 40 minutes, then serve.

*I have tried many different marinades with this but my favorite is apple/bourbon. You can usually get it at Harris Teeter.
