3 Tbsp. cornstarch
6 c. whole milk
2 2/3 c. sugar
4 large or 3 small eggs
3/4 tsp. salt
13 oz. can evaporated milk
1 pt. whipping cream
3 1/2 Tbp. pure vanilla extract
25 lbs. crushed ice
Ice Cream salt

Mix cornstarch with 1/2 c. milk. Add 1 1/2 c. milk and cook in double boiler until thick and smooth, beating constantly. Blend sugar, eggs, salt, & evaporated milk in electric mixer. Add hot cornstarch mixture & beat well. Add whipping cream, remaining milk & vanilla. Pour into gallon electric or hand freezer. Pack with layer of crushed ice and layer of ice cream salt until entirely covered. Freeze until firm and remove paddle. Be certain to pour off excess water. Add more crushed ice and salt. Cover freezer tightly and store.

Fresh peach ice cream: Add 2 c. fresh peaches, crushed. Use 1 Tbsp. vanilla and 1/2 tsp. almond extract.

Strawberry ice cream: Add 3 c. fresh strawberries, crushed. Omit vanilla & evaporated milk.

Banana ice cream: Add 2 c. fresh bananas, crushed. Use 1 Tbsp. vanilla & omit evaporated milk.
