"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
1 ½ cups uncooked grits
5 cups boiling water
1 tsp. salt (I use half salt and half garlic salt)
¾ cup margarine or butter
1 lb. package Velveeta Cheese, cubed
5 eggs, beaten
1 cup milk
1 lb. Ham, sausage or bacon, cooked and crumbled
1 cup shredded cheddar cheese

Directions:
Directions:
Stir grits into boiling water. Reduce heat and stir in salt. Cover and cook, stirring occasionally, until grits are done, 5-10 minutes. Remove from heat and add butter and Velveeta cheese; stir until melted.

Beat eggs and then add milk (I add a little black pepper). Add a small amount of the hot grits, stirring well. Stir milk and egg mixture into remaining grits, stirring constantly until well blended. Stir in ham, bacon or sausage. Spoon mixture into greased 9x13’ baking dish. Sprinkle with shredded cheese. Bake at 375° for 45 minutes.

Personal Notes:
Try this—even if you don’t like grits. I’ve had grits haters taste it and love it!
