1 1/2 tablespoons unsalted butter, melted, plus softened butter for greasing pans
1 1/2 cups flour
3/4 teaspoon kosher salt
3 extra-large eggs, at room temperature
1 1/2 cups milk, at room temperature

Directions:
Directions:
Preheat the oven to 425 degrees.
Generously grease popover pans or muffin pans with softened butter. You’ll need enough pans to make 12 popovers. Place the pans in the oven for exactly 2 minutes to preheat.
Whisk together the flour, salt, eggs, milk and melted butter until smooth. The batter will be thin. Fill the popover pans less than half full and bake for exactly 30 minutes.
NOTE: There are 3 secrets to great popovers: Make sure the pan is hot before you pour in the batter, fill each section no more than half full and NO PEEKING while they are in the oven!

I first had popovers at the Jordan Pond House Restaurant while visiting Mom & Dad in Maine the summer they worked there. They served them with homemade strawberry jam and they were DELICIOUS. The food was definitely the best part of the Maine trip! Mom brought home a popover pan, which I have borrowed before, but they are also good baked in muffin pans.

I usually make popovers for Christmas Eve dinner. Last year I was so disappointed when they didn't rise and came out hard and flat (and inedible). Couldn't figure out why until almost done cleaning up the kitchen after dinner and found the eggs still sitting out on the counter!
