1stick, unsalted butter very soft
1pinch kosher salt
1teaspoon freshly ground black pepper
1tablespoon minced garlic
4Tablespoon Romano or Parmesan cheese
1pinch cayenne pepper
1pinch white pepper (I usually add cayenne!)
1spritz lemon juice
1teaspoon minced Italian parsley

1dozen freshly shucked oysters

Whisk together all sauce ingredients

For oysters: heat gas grill until very, very hot. Can also set home oven to broil. Place oysters on ceramic shells or use oyster shells . Cook oysters in their own juices for a few minutes, just until they start to bubble and the edges curl. top each oyster with some of the sauce recipe, grated Parmesan or Romano, parsley. Return to oven to broil until cheese is melted and bubbly. Serve with sliced French bread (to "sop" up all delicious sauce-nom nom!) . Can squeeze lemon juice over oysters.
