1 tbsp. grapeseed oil
1 onion diced
5 cloves garlic, minced
450g extra lean ground turkey
1 carrot, diced
1 rib celery, diced
12 brown mushrooms
1 red pepper
4 tsp. chili powder
1 tsp. each ground cumin and coriander
1/2 tsp dried oregano
1/2 tsp. salt
1 can (796ml) whole tomatoes, crushed by hand
2 tbsp. tomato paste
1 can (540ml) chickpeas, drained and rinsed
4 c. lightly packed baby spinach
*Great with cornmeal buttermilk drop biscuits*

Sauté onions and garlic over medium-high heat until beginning to soften, 3 minutes. Stir in turkey, carrot, celery, mushrooms and red pepper; sauté, until turkey is browned, 5 minutes. Stir in spices and salt; saute for 2 minutes. Stir in tomatoes, chickpeas and tomato paste; bring to boil. Reduce heat and simmer, stirring occasionally, 10 minutes. Add spinach, cook until wilted.
