Directions:
Roll out the pie dough pastry until in a large circle.
Using a saucer as a guide, cut out large circles.
Place a couple of tablespoons of the fruit filling onto the circle of pie dough.
Fold the pie dough over making a half circle.
Crimp the edges of the pie crust with a fork to seal the fruit into the pie cough.
Using a cast iron skillet, heat about a 1/2 inch of oil in the bottom of the skillet.
Fry the pie until golden brown and serve.
You may also bake the fried pies in the oven but they will not be as crispy.
(Biscuit dough may be used but you have to roll each circle out until very thin so the pie will not be too doughy.)

Personal Notes:
Grandmother Hardin gave the this recipe when she was in the nursing home. Fried fruit pies are a very southern and country dessert. People would raise there own fruit and can the fruit for the winter. I tried to make the fried pies for her and her roommate, Mrs. Kathryn Swing, but they were just not as good as Grandmothers! They both told me that I needed to practice!!
