3 -3 1/2 lb pot roast

1-2 Tbsp. oil

2 1/2 cups water

2 tsp. salt

1/4 tsp. pepper

1 bay leaf

4 medium onions sliced

3 stalks celery, cut into pieces

6 medium carrots, cut into pieces

4 medium potatoes, peeled and halved

Directions:
In large dutch oven brown meat on both sides in hot oil for 15 minutes. Add water, salt pepper, bay leaf, 1 onion and 1 stalk celery. Simmer, covered 2 to 2 1/2 hours or until meat is tender. Add remaining vegetables, simmer 45 to 60 minutes or until tender. Remove meat and vegetables. Thicken juices with 3 Tbsp. flour mixed with 1/4 cup water. Stir into liquid in pan. Cook until mixture comes to boil, stirring constantly.

Alternate:

Brown meat. Add all other ingredients. Bake at 350o approximately 3 hours. Use drippings for gravy.
