3 or 4 chicken breasts
4 or 5 roma tomatoes, chopped
1 clove garlic, minced
1 tsp olive oil
1 tsp balsamic vinegar
1/8 tsp sea salt
Handful basil, chopped
1 ball of fresh mozzarella

Directions:
Directions:
Preheat oven to 375°. Sprinkle chicken with salt and pepper, then bake for about 25-30 minutes until juices run clear. Once the chicken is cooked through, top with slices of fresh mozzarella and place back in the oven for 3-4 minutes to melt the cheese.
Meanwhile, combine chopped tomatoes, garlic, olive oil, balsamic vinegar, sea salt and basil in a bowl. Refrigerate until chicken is ready to be served and spoon over top of the chicken.
Top with extra basil and Parmesan slices for an extra pop of flavor.
