_Cabbage Slaw_
> ¼ head of cabbage, thinly sliced
> 4 oz of pickled jalapeños, minced
> 1 tablespoon minced cilantro
> ½ teaspoon salt
> juice from 1 lime

_Pulled Chicken Chipotle Salad_
> 1 lb chicken
> ⅓ cup yogurt or mayonnaise
> juice from 1 lime
> 1 chipotle in adobo, minced
> 1 teaspoon of adobo sauce
> 1 teaspoon mustard
> pinch of salt
> freshly ground pepper

_Sandwiches_
> 4 Cemita rolls (alternatively sesame or brioche buns)
> ½ lb Oaxacan cheese (alternatively fresh mozzarella)
> 1 avocado

Directions:
Directions:
1. Cook your chicken - original recipe recommends boiling, but grilling, frying or broiling is all fine too.

2. Shred the cooked chicken and mix in a bowl with yogurt (or mayonnaise), lime juice, minced chipotle, adobo sauce, mustard, salt, and pepper.

3. Mix all of the slaw ingredients in a bowl, let it sit for 15 minutes.

4. Assemble sandwiches by layering the chicken, cheese, avocado, and slaw in the rolls.
