1 c. persimmon purée
½ T. lemon juice
1 tsp. baking soda
1 egg
1 c. sugar
½ c. oil
8oz. dates, chopped
1¾ c. flour
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
¼ tsp. cloves
1 c. chopped nuts

Directions:

Preheat oven to 350º. Grease a cookie sheet.
Mix the persimmon pulp and baking soda. Set aside. Beat the egg, sugar, and oil, until light and creamy. Add the dates and mix well. Add all the dry ingredients to the mixture. Mix well. Stir in the nuts. Drop by teaspoonfuls onto the cookie sheet. Bake for 15 minutes.
