1 lb. mincemeat
1 cup nutmeats
1/2 cup melted butter
2 egg yolks, unbeaten
3/4 cup raisins
1 tsp vanilla
1 cup sugar
2 cups flour
1 tsp soda dissolved in 1 tbsp boiling water
2 stiffly beaten egg whites

Directions:

Mix the ingredients as given, folding the egg whites into the batter. Pour into greased and floured bunt pan. Bake at 275 degrees until done. Insert case knife, when it comes out clean, cake is done.

This is good freshly cooked but aging it in wine is special. Pierce cake and sprinkle with Orange
Curracao. Wrap in double thick foil, store in a covered tin. Un wrap ocassionally and repeat sprinkling for long keeping. It mellows with sprikling.
