1 lemon - grated rind & juices
salt to taste
1 cup water
1 TB gelatin (1 envelope)
3 egg yolks
1 cup sugar (scant)

baked pie shell

Beat all together & put into a saucepan

Cook until it becomes a thick custard.

Cool slightly then fold in beaten egg whites

Pour into baked pie shell then chill
