2+1/2 cups sifted flour
1+1/2 cup sugar
3+1/2 tsp baking powder
1 tsp salt
1/2 cup SPRY
3/4 cup milk
1/4 cup maraschino cherry juice
1 tsp vanilla
2 tsp almond extract
4 egg whites, unbeaten
18 maraschino cherries, well drained & very finely chopped
1/2 cup walnuts, very finely chopped

Preheat oven to 375º

Sift flour, sugar, baking powder & salt into mixing bowl.

Drop in SPRY

Combine milk & cherry juice

Add 3/4 cup of this liquid into flour mixture. Addf flavorings

Beat 200 strokes (2 minutes by hand or mixer at low speed) Scrape bowl & beaters.

Add remaining liquid & egg whites & beat 299 more strokes.

Add cherries & nuts & blend well.

Pour batter into 2 - 9" cake pans, greased & lightly floured

Bake 20 - 25 minutes
