**Dough
1 c sugar
1/2 c shortening
1 egg
3 1/2 c flour
1/2 c milk
2 tsp baking powder
1 tsp vanilla
1/2 tsp salt

**Filling
1 1/2 c raisins
3/4 c sugar
3/4 c water
1 tsp cornstarch

Directions:
Preheat oven to 400º

Prepare Filling:
In a medium saucepan add sugar, water & raisins. On medium heat bring to a gentle boil. Add cornstarch stir thoroughly. Gently boil until sauce is thick. Turn heat to low

Prepare dough:

On floured counter, roll dough 1/4 inch thick. Cut out circles using a cookie cutter. Place 12 circles on a cookie sheet. Put a small dollop of filling in the center of each circle. Cover the filling with another circle. Use your finger to press down the edges.

Bake for approximately 7-10 minutes or until the bottom of the cookies is a golden brown.

**Note: We double the filling
