1 1/2 lb. medium shrimp peeled and deveined
3 cups of thinly sliced red and yellow peppers
1 cup thinly sliced red onion
1 medium jalapeņo pepper, seeded and thinly sliced lengthwise
2 1/2 tsp. ground cumin
1 tsp. ancho chili powder
1/2 tsp.garlic powder
2 Tbsp.olive oil
1/2 cup chopped cilantro
3/4 tsp. kosher salt
1/4 tsp.pepper
1 Tbsplime juice
hot cooked rice
diced avocado
pico de gallo
lemon wedge
sour cream

Directions:
Directions:
Toss together shrimp, peppers, onion, jalapeņo, cumin, chili powder, and garlic powder in large bowl.
Preheat oven to high broil. Position rack 6 inches from heat source. Arrange mixture on baking sheet and drizzle with oil. Broil in over until mixture is tender and slightly browned, 6-7 minutes stirring every 3 minutes.

Remove from oven and sprinkle with chopped cilantro, salt, pepper and lime juice. Serve onto-of rice and top with avocado, pica de gallo, sour cream and lime wedge.
