4 half chicken breasts, skinless & boneless
salt
freshly ground pepper
sugar
1 bottle clam juice
Saltine cracker crumbs
4 T. butter
lemon wedges

Directions:
Directions:
Place chicken between two pieces of waxed paper and pound firmly til 1/4 inch thick. Cut each in half and rub with salt, pepper & sugar.

Place in a shallow bowl and pour clam juice over. Let marinate 6 hours in refrigerator.

To cook:
Dip pieces in cracker crumbs. Heat butter in skillet. Fry over medium heat until crisp. Keep warm in oven.

Serve with lemon wedges
