1 standing rib roast, 3 ribs and 7 lbs
Salt and pepper
6 Garlic cloves, crushed
1-2 tsp. Black pepper, crushed
2 tsp Thyme leaves

Directions:
Preheat oven 200 degrees. Heat large roasting pan over two burners set at medium-high heat. Place roast in hot pan and cook on all sides until nicely browned and about 1/2 c fat has been rendered, 6 to 8 minutes.
Remove roast from pan, set wire rack in pan, then set roast on rack. Season with pepper, garlic, and thyme. Place roast in oven and roast until meat registers 135º for medium rare or approx 30 min per pound. Let stand 20 to 30 minutes.

When buying the meat, ask for first cut, the loin end or small end. They all refer to the same most desirable cut of prime rib.
