1 Corned Beef (and size really)
4 parts Whole Coriander Seeds
2 parts Whole Black Peppercorns
1 part Whole Mustard Seeds
1 part Ground Cayenne
1 part Ground Garlic
1 part Brown Sugar

Directions:
Directions:
1: Trim fat from the corned beef and soak in water, at least over night, inside refrigerator (this helps reduce the saltiness of the meat)

2: Coarsely grind whole spices and mix together

3: Remove corned beef from water and rub with spices, put corned beef on a cooling rack in your refrigerator overnight

4: Smoke (wood species doesn't matter too much as the pastrami is strongly flavored) the spiced corned beef up to about 6 hours to make pastrami

5: If desired, steam the pastrami in your oven by putting it on your broiler with some water underneath and covering with foil at about 250º F for up to 6 hours (this will make it more tender)
