Ingredients:  
3 lbs yellow squash, sliced or diced
1/2 cup Vidalia onion
1 can cream of mushroom or chicken soup (10.5 oz)
1 cup mayonnaise
1 egg
8 oz shredded sharp cheddar cheese
1 tsp salt
1/2 tsp pepper
2 sleeves Ritz crackers, crushed
1 stick melted butter

Directions:
Directions:
Preheat oven to 350º.
Slice or dice squash & set aside.
In a separate bowl mix soup, mayo, egg, cheese, onion, salt & pepper.
Pour over squash & mix well.
Pour into a sprayed casserole dish.
Mix crushed Ritz & melted butter & top casserole.
Cover casserole & bake for 30 minutes.
Uncover casserole & bake 20 minutes longer until golden brown.

Personal Notes:
If you like you can add a cup of chopped cooked chicken into casserole.
Also you can add 2 cups of cooked rice to casserole.
