Ingredients:
Ingredients:
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
5 oz. butter (10 Tbs.)
2 eggs, well beaten
7 Tbs. milk
1-2 Tbs. sugar (optional)

Directions:
Directions:
Preheat oven to 450º.

Sift flour, baking powder, and salt into a bowl. Rub in butter with fingertips until mixture resembles coarse breadcrumbs.

Make a well in the center and pour in beaten egg and milk. Combine lightly and quickly with a fork until dough holds together.

Turn dough out onto a lightly floured board and roll into a rectangle about 1/2 inch think. Fold in three (as you would puff pastry), then roll out again. Repeat this twice more.

After folding dough for the third time, roll it out to 1/2 inch thick and cut into 2 1/2 inch rounds with a biscuit cutter.

Arrange scones on an ungreased baking sheet and bake for 10-15 minutes or until well risen and golden. Serve warm with jam and cream.
