1 bulb garlic
2 tbsp olive oil
9 slices of parma ham
3 chicken breast
200ml chicken stock
100ml double cream
1 tbsp basil leaves
salt and pepper

step1
preheat the oven to 180 fan -place the entire bulb of garlic in tinfoil with 1 tbsp of oil
wrap it securely place in the oven for 30 minutes until the bulb has softened completely and can be pulled apart and the garlic from each clove can be squeezed out

step2
lay 3 slice of parma ham beside each other slightly overlapping season the chicken breast and place in the middle of the parma ham fold each slice over covering the chicken place on abaking tray and bake in the oven for 20 mins

step3
in a small pan reduce the chicken stock by half add the cream and add three garlic gloves reduce by half again and strain and stir through the chopped herbs
remove chicken from oven and serve
