2 cups flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
3 eggs
2 cups sugar
3/4 cups brown sugar, packed
3/4 cups vegetable oil
3/4 cups buttermilk
2 tsp vanilla
8.5 oz drained crushed pineapple
2 cups grated carrots
1 cup chopped nuts
3.5 oz flaked coconut

Buttermilk Frosting (recipe below)

Preheat oven to 350º

Beat eggs. Add sugar, oil, buttermilk and vanilla. Beat together.

Mix in flour, baking soda, cinnamon and salt.

Stir in pineapple, carrots, nuts and coconut.

Pour into a lightly greased and floured 13x9 baking pan.

Bake 55-60 minutes until cake tests done.

Make Buttermilk Frosting while cake is in the oven.

Remove cake from oven and Pierce cake all over with fork. Pour Buttermilk Frosting over hot cake. Let stand until cool.
