1¼ c. Boiling Water
1 c. Oatmeal
½ c. Butter
1 c. Brown Sugar
1 c. Sugar
2 Eggs, well beaten
1&⅓ c. Flour
1 tsp. Cinnamon
1 tsp. Baking Soda
½ tsp. Salt
1 tsp. Vanilla

**Topping**
6 tbsp. Butter, melted
½ c. Brown Sugar
¼ c. Whipping Cream
½ tsp. Vanilla
1 c. Coconut, firmly packed

Directions:
Directions:
Pour boiling water over oats and let set 20 minutes. Cream together, butter, brown sugar, sugar and eggs. Add oatmeal. Sift dry ingredients and add to cream mixture. Add vanilla. Pour into 9x13 cake pan. Bake at 350º for 45-50 minutes.
When cake is done baking, prepare the topping. Mix together butter, brown sugar, heavy cream, vanilla and coconut. Spread on cake and place under broiler for 3 minutes or until coconut is toasted.
