2 15 oz cans chick peas (garbanzo beans), rinsed and drained
2 15 oz cans black beans, rinsed and drained
½ cup chopped onion
1 jalapeno, finely chopped (optional)
½ cup sun dried tomatoes, chopped
1 pint grape tomatoes, cut in half
⅓ cup fresh dill, chopped
⅓ cup fresh basil, chopped
⅓ cup Italian flat leaf parsley, chopped
¼ cup lemon juice
⅓ cup extra-virgin olive oil
2 cloves garlic, pressed
3 tbsp apple cider vinegar
Salt & pepper to taste
Feta cheese (optional)

Directions:
Directions:
In a medium bowl, mix together the chick peas, black beans, onion, jalapeno pepper, sun dried tomatoes, tomatoes, and herbs. Whisk together the lemon juice, olive oil, garlic, vinegar, salt and pepper. Drizzle the dressing over the salad mixture, stir lightly. Refrigerate the salad for several hours, Optional to add feta but do so when you are ready to eat.
