6 pork chops
2 T. shortening
1-1/2 tsp.,salt
1/4 tsp. pepper
1 c. uncooked rice
3-1/2 c. chicken broth
1/2 c. diced green pepper
1/2 c. diced onion
1/4 tsp. thyme

Directions:
Directions:
In a large skillet, brown pork chops on both sides in shortening. Remove from skillet and season with salt and pepper. Add rice to pan drippings and cook until brown, stirring constantly. Add chicken broth, green pepper, onion and thyme. Pour mixture into a 3 quart casserole dish. Place pork chops on top, cover, and bake at 350ºF for I hour. Serves 6
