1/2 tsp yeast
2 tsp warm water
1 tsp sour cream or plain yoghurt
3 egg yolks
1 tsp salt
1 2/3 c flour
1 c mashed potatoes
1 c butter

Directions:
Directions:
This can be done with an electric mixer. Dissolve yeast in warm water and let stand for 15 minutes. Add sour cream and yolks: mix Add salt and butter in chunks, cream well.Mix in the mashed potatoes and add the flour in 1/2 c portions at a time. mixing well between additions. You should have a nice smooth ball. Fold 3 times. Rolls out to 1/4 inch thickness and cut 1 1/2 rounds. 'brush top with egg yolk and bake at 400º until golden brown. 25-30 minutes. Serve hot instead of dinner rolls or as a snack.
