1 c sliced yellow squash
1 c sliced zucchini
1 c chopped onions
1 c shredded Cheddar or Swiss cheese
2 eggs beaten
1 c evaporated milk
¼ c butter, melted
Salt & pepper

Crust
2 c Crackers or potato chips
2 tbsp butter

Directions:
Directions:
Preheat oven to 400°

Par-boil squash, onions & a small amount of water. Simmer for 5 minutes then drain.

Mix squash and rest of the ingredients.

Crush crackers in a zip lock bag then spread over top of casserole drizzle with melted butter.

Bake until crackers turn lightly browned.
