3 eggs, beaten
1 cup oil
2 cups sugar
2 tsp vanilla
3 cups shredded zucchini
1 small can drained crushed pineapple
3 cups flour
2 tsp baking soda
1/4 tsp salt
1/2 tsp baking powder
1 1/2 tsp cinnamon

Directions:
Directions:
Beat the eggs, sugar, oil, and vanilla until foamy. Add the zucchini and pineapple. Combine all dry ingredients and add to the zucchini mixture and mix until blended. Pour into 2 greased and floured loaf pans. Bake at 350º for 1 hour. Let cool before removing from loaf pans.
