1 lb Italian Sausage casings removed
1/4 c red wine vinegar
1 T Dijon
1 T whole grain mustard
1/4 c olive oil
1 lb radiatore pasta
Salt and pepper to taste
4 oz arugula baby
2 oz thin slice radicchio
1 yellow bell pepper diced

Directions:
Directions:
Brown sausage and break into small pieces. Vinaigrette in lg bowl:
Whisk vinegar, mustards, salt and pepper. Continue whisking and slowly drizzle oil.
Add sausage to this bowl.
Cook pasta until just al dente. Drain and cool. Add to bowl with arugula, radicchio, yellow pepper, more salt and pepper.
