1 T. oil
1 lb. sausage
1 onion, peeled and diced
2 medium apples, peeled and diced
6 T. butter
2 loaves bread (sourdough and wheat recommended), cubed
15 sprigs parsley
6 - 8 sage leaves, chopped
4 eggs
2 c. turkey/chicken stock
Salt and pepper to taste

Heat oil in large skillet. Add sausage and brown, breaking into dime-sized pieces. Transfer meat to bowl using slotted spoon. Add onion to skillet, after one minute add apples and cook for two more minutes. Place Apple and onion in bowl with sausage. Add bread cubes, parsley, and sage to bowl and mix.

In separate bowl mix eggs, stock, and salt and pepper. Pour over sausage and bread mixture; gently toss.

Insert stuffing into turkey or greased 16” baking dish, using 2 T. Butter. Spread mixture in pan and dot with remaining 4 T. Butter. Bake for 50 - 60 minutes.
