1/4 cup brown sugar
1/2 cup apple cider vinegar
1 clove garlic, minced
1 gala apple, peeled, cored and diced
juice of 1/2 lemon
1/2 cup olive oil
1/4 cup canola oil
1 tsp fresh thyme
salt

Directions:
Directions:
Add the sugar and 6 tablespoons vinegar to a small skillet over medium heat.
Cook and reduce until it turns a dark caramel color and begins to thicken.
Add the apples and garlic and sauté, stirring occasionally, until the apples are cooked through, about 5 minutes.
Remove from heat and pour the mixture into a blender with 2 tablespoons vinegar, the thyme, lemon juice, and a pinch of salt.
Return to blender and pulse until blended, then slowly add in the oil until the dressing is emulsified.
Taste and season with salt or a splash of vinegar, if needed.
