Ingredients: 15-16 pieces boneless, skinless, chicken breasts (about 5 lbs) 1 whole large head of garlic, minced ¼ cup oregano, less if dried 1 cup red wine vinegar 1 cup olive oil 1 cup dried prunes 1 cup green olives ½ cup capers 6 bay leaves 1 cup brown sugar 1 cup dry white wine

Directions:Combine all ingredients except the brown sugar and wine. Pour over chicken. Marinate overnight or up to 24 hours in refrigerator. Place one layer only of chicken in large baking pan. Spoon over marinade, pour white wine over chicken and sprinkle brown sugar on top. Bake 50 minutes at 350 degrees or until juice runs clear, not pink when forked. Cool in juices and refrigerate. Best served warm (do not heat to hot) or room temperature and it is the best served next day as flavors will evolve. . |
