Bunch of Mustards or Collards
Smoked Pork Hocks or Neck Bones
Onions
Olive Oil

Directions:
Directions:
Wash and remove the larger stems from Mustard and Collards. Take the leaves, stack them up and roll into a roll and slice them up. Mince up your onions and place them in the bottom of a pot with about 2 Tbsp. of olive oil caramelize the onions, make sure you do not burn. Add your smoked pork and water to the onions and boil until all the good stuff on the bottom of the pot comes off and the water turns brown from the smoked meat. Add your greens and cover with water, add salt and pepper and boil on medium heat until tender 30-45 minutes.
