1 1/2 lbs ground beef
1/4 c onion - finely chopped
salt and pepper to taste

1 can creamed corn (11-13 oz)
1 can of tomato soup (11-13 oz)

mashed potatoes

Directions:
Directions:
Brown beef and onion together and add salt and pepper to taste. Cook just until cooked through.

Stir in tomato soup and creamed corn.

Pour into 2-qt casserole dish. Top with mounts of moist mashed potatoes.

Bake at 350º for about 30-40 minutes until potatoes begin to brown and meat mixture is bubbly.

Meat mixture can also be made and served over mashed potatoes.

This was another of our family favorites. As the name implies, it truly is a busy day casserole. While potatoes are cooking, the meat mixture can be made. It can be served immediately or made into a casserole and refrigerated and taken out when needed. It also freezes well.
