5-6 chicken breasts boneless and skinless, cooked and cubed. Reserve the broth for cooking the rice.
2 cans cream of chicken soup
1 16 oz carton of sour cream
2 sleeves of ritz crackers crushed (I don't add these)
1-2 Tbs poppy seeds
1 1/2 cups raw rice cooked in two cups chicken broth from chicken (will yield 3 cups cooked rice)

Prepare chicken. Mix with soup and sour cream. Place cooked rice in the bottom of a 9x13 baking dish. Layer the chicken mixture over the rice. Melt butter and mix with crushed crackers. Spread cracker mixture over the top of the casserole. sprinkle poppy seeds on top. (I add it to the sour cream mixture.) Bake at 350 degrees for 30-40 minutes. Can be made ahead of time and frozen.
